How to fold triangles:

Cut each brique circle in half. The semi-circle should be on the left and the straight line on the right. Fold half of the left side to the right. Place a small amount of filling on brique pastry. Fold to left, then back to right, then again to the left. Fold remaining pastry under to make a triangular parcel. See photos in almond samsas recipe.

How to fold cigars:

Cut each brique circle in half. The semi-circle should be on the left and the straight line on the right. Place a small amount of filling on brique pastry. Fold part of the left side to the right and part of the right side to the left. Roll. See photos in almond samsas recipe.

Boureks can also be fried, but I prefer the lighter baked version. Once folded, and before cooking, they can be frozen. Just get them out of the freezer when you need them and cook them for the same amount of time. They don’t require defrosting before cooking.
